A simple oaty breakfast bar with added fruitiness of blueberries. Perfect for breakfast on the go or a quick and healthy snack.

Makes: 9-12
Ingredients:
140g jumbo oats
140g wholemeal flour
50g demerara sugar
4 tablespoons honey
50g butter, melted
320g fresh or frozen blueberries, mashed
Method:
1) Pre-heat the oven to 180ºC/350F/Gas Mark 4 and grease and line a 20cm x 20cm (8”) square baking tray or dish.
2) Put the oats, flour and sugar into a bowl and add the melted butter and honey; mix well until it just holds its shape.
3) Press three quarters of the mixture into the prepared tray, pressing firmly; add the blueberries and then scatter the remaining mixture over the top, breaking it up to resemble a crumble..
4) Bake in pre-heated oven for 20 minutes until golden brown; allow to cool completely before cutting into squares.
