Strawberry and White Chocolate Flapjacks

A scrummy twist on the traditional oaty bars

FlapjacksTime: 1 hour, plus cooling.
Makes: 16

Ingredients:

200g butter, plus extra for greasing
200g golden syrup
200g soft brown sugar
350g oats
150g strawberries, hulled and chopped
100g white chocolate drops

Method:

1) Preheat the oven to 150C/300f/ gas mark 2 and grease a deep baking tray.
2) In a large saucepan, heat the butter until melted completely, then add the golden syrup and sugar. Stir until the sugar dissolves, then take off the heat, and add the oats, half the strawberries and half the chocolate chips.
3) Tip the mixture onto the prepared tray, then flatten down to fill the tray and level off with the back of a spoon. Sprinkle with the remaining strawberries, pressing hem down slightly where necessary.
4) Bake for 40 minutes, then sprinkle with the remaining chocolate chips, pressing down with the back of a spoon and cool completely, before cutting into 16 squares.
